As my project is growing, my image folder is too. Would love to be able to create sub-folders to better organize.

You got my vote on this one! I was going to suggest the same
I have a ton of images as well. A subset of those images will always remain. A larger set can be replaced, leaving their image names intact, in order to change the look and feel of my remote. It would be much easier if I could simply remove that folder and replace it with a new folder, leaving the images that remain untouched.
